Ingredients
- 1 tablespoon vegetable oil
- 1/4 cup red onion, small dice
- 3 ounces chorizo
- 1 12-inch flour tortilla
- 1/4 cup refried black beans
- 1/2 cup shredded chihuahua cheese

Instructions
Preheat oven to 450 degrees Fahrenheit.
Add vegetable oil to a sauté pan over medium heat, once hot, add diced red onion to the pan and cook for 3-4 minutes until softened.
Add chorizo to the pan and break up with a spoon into crumbles. Cook chorizo for 5-8 minutes until heated through and browned.
Prepare Tlayuda by spreading refried black beans on the tortilla. Top with chihuahua cheese and cooked chorizo and onion. Bake on a sheet tray for 5-6 minutes or until edges are crispy and browned and cheese is melted
Remove from oven and top with radish slices, avocado slices, cilantro, and queso fresco, squeeze lime juice over top and enjoy.
