aMAIZEing Salsa with Blue Chips
- 1 mango, peeled and diced
- 1/2 cup cucumber, peeled and diced
- 1 yellow bell pepper, diced
- 1 tablespoon jalepeno pepper, finely diced
- 1/3 cup sweet onion, diced
- 1 tablespoon lime juice, plus 1/4 teaspoon lime zest
- 1/3 cup cilantro, coarsely chopped
- 1/2 teaspoon ground cumin
- salt and pepper to taste
- Blue corn tortilla chips
Place all ingredients in a mixing bowl and mix until well combined. Season with salt and pepper to taste. Serve with blue corn tortilla chips.
