Roasted Strawberry Popsicles
- 3/4 cup yogurt, plain Greek
- 1/2 cup whole milk or half-and-half
- 8 ounces strawberries, tops removed and roasted (about 1 1/2 cups)
- 1 tablespoon sugar

Preheat oven to 400 degrees and gather ingredients and equipment. Place strawberries on a baking sheet lined with parchment paper and bake for 15 minutes.
While strawberries bake, combine Greek yogurt, half and half, and sugar.
Let strawberries cool to room temperature and puree in a blender. Add the pureed strawberries to the yogurt mixture and stir until well combined.
Pour into popsicle molds and freeze for 4 hours before serving.
