Parmesan-Swiss Fish
Ingredients
- 1 1/4 pound fresh or frozen, skinless halibut, salmon or tilapia fillets
- 3/4 cup (3 oz.) cheese, shredded Swiss
- 1/4 cup yogurt, plain Greek - (0%, 2% or 5% fat)
- 1/4 cup mayonnaise
- 2 tablespoons sliced green onion
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons cheese, grated Parmesan
- 1/4 teaspoon paprika

Instructions
Thaw fish, if frozen. Cut into 4 serving-size pieces, if necessary. Pat fish dry with paper towels. Arrange in a single layer in a greased 15- x 10- x 1-inch baking pan, tucking under any thin edges. Measure thickness of fish.
In small bowl toss together Swiss cheese, yogurt, mayonnaise, green onion, salt and pepper. Spread over top of fish fillets. Sprinkle with Parmesan cheese and paprika. Bake, uncovered, at 450° until fish flakes easily with a fork. (Allow 6 to 8 minutes baking time per 1/2-inch thickness of fish.) Serve immediately
