Blueberry Banana Blast Smoothie
- 1 cup 2 % milk
- 1/2 cup vanilla Greek yogurt, store-bought or homemade
- 1 cup flaked coconut, washed and patted dry
- 1 cup blueberries, frozen
- 1 fresh banana, peeled
- 1/4 cup rolled oats
- 1-2 teaspoons yeast, optional
Place all ingredients into a blender carafe. Cover the carafe and blend on high speed for one minute, or until creamy and smooth. Serve immediately.
Recipe Notes: This recipe is easily scaled up or down, as needed. Smoothies may also be made in advance and frozen for later consumption. Simply pour the smoothie into a freezer safe container with a lid--leaving 1 inch of headspace--and freeze. Frozen smoothies can double as ice packs in packed lunches, which should reach a slushy, soft serve consistency in about four hours.
