Three Delicious Dairy Recipes Inspired by Mexico
Break out of the Taco Tuesday rut and try these new Mexican-inspired recipes!
Jenn Fillenworth, chef and registered dietitian from Grand Rapids, MI, of Jenny With the Good Eats, created these delicious dishes that feature dairy. Jenn completed one of her culinary internships at celebrity chef Aaron Sanchez’s restaurant, Johnny Sanchez, in New Orleans. She learned a lot about Mexican cooking there and created these versions of some of her favorite specialties.
Queso Fresco
While you can buy queso fresco in many local markets, did you know you can make your own from fresh Michigan milk? It’s a fairly simple process of heating milk, adding an acid, and letting the results drain. Can’t get fresher than that!
Elote Dip
Once you’ve made the queso, crumble it and add it to this flavorful corn dip. In the summer, we highly recommend Michigan sweet corn, of course. But, when that’s not available, you can use frozen or canned.
Tlayuda (Mexican Pizza)
We’re not just shaking up Taco Tuesdays: we want to break the mold on pizza night, too. Try this Mexican-style pizza made with chorizo (a spicy Spanish pork sausage), black beans, and flour tortillas. Get creative on toppings, including radish slices, avocado and, of course, queso fresco!
Bonus Recipe: Creamy Tropical Margarita
We highly recommend this frosty adult beverage to round out these recipes. Milk works like magic turning this blend of frozen pineapple, banana, tequila and triple sec into a creamy, slushy drink.
