Roasted Vegetable English Muffin Pizzas
- 4 English muffins, split
- 1 cup pizza sauce
- 2 cups shredded Mozzarella
- 2 cups roasted vegetables
Preheat oven to 375° F.
Place English muffin halves cut-side up onto a baking sheet. Spoon some of the pizza sauce on each one. Top with Mozzarella cheese and roasted vegetables. Bake for 10 minutes or until cheese is melted and browned on the edges.
Tip: Vary your veggies and roast 1 to 2 different vegetables for pizza toppings. Or use leftover veggies from dinner the night before.
