Quark Truffles

The secret ingredient in these rich, chocolately truffles is quark, a soft cheese popular in Germany. You can find it at major supermarkets, or make our own homemade recipe.

Ingredients

  • 1/2 cup 60% bittersweet chocolate, or 60% cacao extra dark chocolate chips (3 oz.)
  • 1 tablespoon creamy peanut butter
  • 3/4 cup plain or vanilla quark
  • 1/4 cup unsweetened cocoa powder

Carbohydrate: 10g (3%)
Protein: 3g (6%)
Total Fat: 7g (11%)
Saturated Fat: 4g (20%)
Trans Fat: 0g
Cholesterol: <5mg (0%)
Sodium: 25mg (1%)
Dietary Fiber: 2g (8%)
Calcium: 4%

Instructions

In microwave-safe medium bowl heat chocolate on high for 1 to 2 minutes or until melted, stirring every 30 seconds.

Stir peanut butter into chocolate until smooth. Stir in quark until combined. Cover and refrigerate about 1 hour or until mixture is easily spooned.

For each truffle, scoop out about 1 tablespoon of quark mixture. Quickly roll into ball. Roll in cocoa powder. Serve immediately or place in wax-paper-lined pan and refrigerate until serving time.

    Mix the melted chocolate with the peanut butter and quark. Scoop and roll in a ball. Roll in cocoa. Serve immediately or place on waxed paper and chill.
