Mozzarella Stuffed Meatballs

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup panko bread crumbs
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1 teaspoon minced garlic
  • Salt and pepper
  • 3 cheese, mozzarella sticks - each cut into 6 pieces
  • 1 cup marinara sauce
  • 1/4 cup cheese, Parmesan

Instructions

Preheat oven to 400° F. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. In a large bowl combine beef, Panko crumbs, egg, Italian seasoning, garlic, salt and pepper, to taste. Form into uniformly sized meatballs (about 1 1/2 inch in diameter).

Place one piece of Mozzarella cheese inside each meatball, completely covering cheese with meatball. Place meatballs on baking sheet and cook for 20 to 25 minutes or until beef is thoroughly cooked and Mozzarella cheese is melted. Sprinkle meatballs with Parmesan cheese. Serve with pasta or dip in marinara sauce.
