Cucumber Yogurt Salad

This refreshing salad is a refreshing summer recipe that can use fresh, local cucumbers and your own homemade yogurt.

Ingredients

  • 1 cup homemade yogurt (can use store bought)
  • 1/2 cup water
  • 1 large cucumber, diced
  • 1 clove garlic, smashed
  • 1 teaspoon salt
  • 1 tablespoon dried or fresh mint
  • Olive oil (optional)

Instructions

In medium sized mixing bowl, stir together crushed garlic, salt and yogurt.

Slowly add water to the yogurt mixture, stirring with a whisk, until you reach your desired consistency.

Stir in cucumbers and mint. Add a drizzle of olive oil to the top and serve immediately.
