Recipe: Warm Chicken Taco Salad
I absolutely love Mexican food, so I have to share one of my favorite recipes.
Warm Chicken (or Hamburger) Taco Salad
- 1/2 C Miracle Whip/Mayo salad dressing, divided
- 4 boneless skinless chicken breast halves, cut into thick strips OR 1 lb. hamburger
- 1 C chopped tomato
- 1 package (1-1/4 oz) taco season mix
- 4 C tortilla shells (I use Cool Ranch Doritos)
- 4 C shredded lettuce
- 1 can black beans
- Shredded Mexican cheese
- Sliced ripe black olives
- Sliced green onion
- 2 cloves garlic, minced
Spray the pan with non-stick cooking spray (not needed for hamburger) and cook the chicken/hamburger on medium-high heat. Put the minced garlic and onion in the pan. Cook until done. Add the dressing and seasoning mix. Cook and stir 3 minutes or until meat is cooked through. Layer chips, lettuce and meat mixture on a large platter. Top with cheese, olives and sour cream if desired.
