With a passion for agriculture and storytelling, she earned a Bachelor of Science degree in Agriculture, Food and Natural Resources Education from Michigan State University. As a lifelong Michigander and dairy enthusiast, Elena can’t imagine a better combination than fried cheese curds dipped in buttermilk ranch – preferably enjoyed at her local county fair!

For real tho: cheese can be a great, convenient budget option to add more protein and flavor into your diet when you're low on cash.

#ICYMI 👉 Move For Hunger successfully set a NEW GUINNESS WORLD RECORDS™ title for the most cereal boxes toppled in a domino fashion. Sorry y'all, but I've got a date with some street corn tonight 😘🌽

Elote is a popular street food across Mexico and Central America. Fire-roasted corn-on-the-cob drenched in crema and rolled in savory, cheesy goodness makes for a brilliantly dynamic and creamy treat. 🙌

🍽️ Enjoy using the recipe below or at our link in bio!

Ingredients 🧀
6 ounces Cotija cheese or mild feta cheese, cut into 1-inch pieces
1/3 cup Mexican crema or sour cream
1/3 cup mayonnaise
1/4 teaspoon ground chile piquin or ground red pepper
1/8 teaspoon salt
6 ears fresh corn, husks and silks removed
1 tablespoon vegetable oil
Lime wedges

Instructions ✅
Place cheese in food processor. Cover and pulse until very finely crumbled (or finely crumble by hand). Pour into shallow dish. In small bowl combine crema or sour cream, mayonnaise, chile piquin or red pepper and salt. Set aside.

Brush corn with oil. Grill directly over medium-high heat for 12 to 25 minutes or until browned and beginning to char in spots.

Insert short bamboo skewers or corn holders into ends of corn ears. Brush corn with crema mixture. Then roll in cheese, gently pressing cheese onto corn. Serve with lime wedges.
